Beans

Beans are a fundamental part of New Mexican cuisine. Just about any local dish in New Mexico will come with a side of rice and beans. Pinto beans are by far the most popular bean variety here, but we also like some other beans commonly found in the Four Corners area like Anasazi beans and Bolita beans!
