Chile pasado is roasted, peeled, and dried Hatch green chile. When traveling or sending a gift, I highly recommend this product for people buying in our store in Albuquerque. Just add water, and it puffs right back up in only a minute! Although I wouldn’t recommend using chile pasado for a recipe such as chile rellenos, it works amazingly well for green chile stew, a green chile sauce, and much more. We have it available in mild, medium, hot, extra hot, and XXX-hot varieties!
