These chicos are made in Northern New Mexico with locally grown corn by farming families who have been doing it for generation. Chicos are very scarce, and we will often be sold out. We should be able to get some during the 2024 chile season, but how many we get really depends on the farmers and availability. Chicos are a great thing to use in New Mexican cooking, and can really kick up a lot of soups, and also add a great flavor to pinto beans. Chicos are roasted in a handmade horno like this before being sun dried!
